Kale Chips Recipe

Here is my favourite kale chip recipe ever so far ever. You will need a food processor and a dehydrator.

1 head of kale.
separate the hard stems from the leaves, and rip into 2-3 inch 'square' pieces.
wash thoroughly and drain.

While they are draining, into your trusty food processor put:

1/2 cup raw cashews
1/4 cup raw sunflower seeds

2T apple cider vinegar
2T lemon juice
1T nutritional yeast
salt to taste
1tsp smoked chipotle powder
3 roughly chopped spring onions (including the white part).

blend thoroughly.

Scoop into the bowl of drained kale. Now is the time consuming(ish) part- the secret to good kale chips is to make sure they are completely covered in the delicious goo. This means getting your squeaky clean hands in there and manually rubbing said goo on every piece of kale before putting them into your dehydrator.

I hope you have a big dehydrator, this makes a LOT of chips. (woohoo!)

warm at 115 for 2 hours, or until crisp. Sometimes it's 3+, depending on the head of kale.

I dare you not to eat them all at once. But you can- because they're so good for you!

Sleep: brief and broken (5 broken hours)
Mood: FRIDAY!! 
Weight: 168.4 (dammit.) 
Body Fat: 21.3% (wait...awesome!) 
Exercise: Light walking at work, 6km various hiking, carrying 10lb knapsack, bike riding, lots of stairs. 
Stats: 79/10/11. soooo. close. 
Money Spent on Food: zilch. Shopping tomorrow, though.

I was pressed for time so I had a smoothie with very little prep.

I like eating cherry tomatoes, they crunch in my mouth like the tiny heads of my imaginary enemies. scrunchamunch.

  • 1.5 cups strawberries
  • 1 banana
  • 1/2 scoop protein powder

-kale chips! I finally got some more kale (I went to 4 different places this week and they were out!) so the classic sour cream and chive flavour kale chips happened. OM NOM. (RECIPE HERE )
- coconut nut cookie

after dinner snacks- more kale chips, a carrot, some red pepper and raw kale. Scrunch.

Day 24 Journal: Body Talking 2

I did my first physical check in a little over a week into the cleanse.

Now, 3+ weeks into it (we finish next Friday) I thought I'd do another journal log about what my crazy body has been doing during the intervening two weeks.

a) skin skin skin! My initial breakouts have cleared up and I have had a lot of people say that my skin looks *great*. I thought I'd noticed a difference, but it's great to get external independent feed back (the people who had mentioned it mostly didn't know each other, and commented at different times and places. Many didn't know I'd been doing a cleanse. Science!

However, the skin on my hands has been crazy dry. I suspect it's a combination of the cold snap we've been having the past week (-19, before windchill anyone? yuck.) and the increased amount of time my hands spend in water, both washing fruit and vegetables and washing UP from eating fruits and vegetables. Blenders, juicers and food processors take a lot of cleaning.

I've also noticed that my general skin tone has changed. This is a documented fact-here's a good article about it.carotenoids! I'm a pretty princess. The end.

b) fat loss. Not the same thing as *weight* loss, mind. About a year ago, I figured out how to make the scale tell me body fat percentage. It was disappointing- 31%. I mean, ok, I'm a woman, higher fat percentage, yada yada. Still, it didn't fit in with my self-image.  Of course, I promptly forgot how to make the scale do that, until earlier this week when Johnny showed me how. Imagine my surprise when my body fat percentage had dropped to 23.5!

Well, imagine even more of my surprise when my weight has stayed more-or-less the same this week, but my body fat has dropped another 2%. This morning I was 21.3%. Crazy. I wish I'd been tracking it since the beginning of the cleanse, but that's life. we'll see how we roll for the next week.

So, this cleanse has been good for cleaning out unwanted fat, but if you're wanting your *number* to change, you might be disappointed. I'm pretty happy to have dropped a bunch of unnecessary fat, though.

c) Muscle tone. Possibly as a result of the fat loss, likely a combination of that and the fairly steady exercise I get, my muscle tone has gotten a lot better, especially through the upper arms and torso. Good stuff. I didn't take the opportunity to work out as much as I feel I should have, over an above hiking around quite a bit and riding my bike, simply because of a lack of energy. The beginning of the month had quite a lot of broken sleep and general stress, which negatively impacted my ability to focus on weights and such.

d) digestion. I'm hungry A LOT. Good thing the vast majority of what I eat is raw fruits and veggies, or I'd be putting *on* weight! There are days I feel that I am eating all day. The difference from a few weeks ago is noticeably that things do seem to be moving *ahem* better than before. However, I feel like my lower abdomen is quite bloated a lot of the time. Stupid intestines. I'm guessing it's the dried plums and apricots. I'm going to cut them out this weekend and see how I go. It might also be the supplement powders, come to think of it. Hmmm.

e) body temperature. FREEZING. Ok, fair disclosure, I'm a little cold most of the time. Still, I noticed that we have our house thermostat 2+ degrees higher than usual, and we're wearing sweaters, slippers and such. Often under a blanket on the couch. Brrrr.

I might do this again in the summer months, which seems more appealing. Lowering my body temperature when it's 40 degrees outside isn't so bad, frankly.

f) energy levels. Up and down, frankly. Days that I remember to eat as often as I'm hungry, I'm all good. Also, taking the supplements (Green Superfood in the morning and Progressive Protein in the evening) I feel has positively contributed to my energy levels. I was certainly not getting enough protein before.

g) mental function. I've been doing crosswords, Scrabble and Sudoku to test out the ol' brainbox, and I'm finding them noticeably easier- especially the Sudoku. Interesting. I'm also feeling generally more intellectually motivated and upbeat on a day to day basis.




Day 24: Recipe Roundup-Favourite Smoothies

Ok. I've been doing this for just over three weeks, here's some of my top favourite smoothies and juices so far.

when I'm making a smoothie, I find it's best to start with the most liquid things first and go on down to the toughest. So, almond milk and an orange or pineapple if they are in, go in first. Then I'll put any berries I'm using in, and lastly, any leafy greens. I'll use chunks of banana to weight the greens down and get them into the blades of my blender.

It's possible to underblend a smoothie, and really hard to overblend. Take that extra 30 seconds to make sure things are really broken down for you.

SMOOTHIE 1: sweet and simple. 
1 cup almond milk
1 banana
1 tangelo or orange
1 cup pineapple
1 cup strawberries

optional: 1-2T fresh raw minced ginger.

SMOOTHIE 2: Strawberry shortcake. 
1cups almond milk
1 banana
1tsp vanilla or 1 inch of vanilla pod
2 cups strawberries, very ripe.

optional: 1-2 tsp honey or agave syrup.

SMOOTHIE 3: Green Goddess
1 cup almond milk
2 cups spinach
1 cup parsley
3 kale leaves
2 bananas
1 scoop Green Superfood powder
1tsp fresh lemon juice

This is literally bright green, like a cartoon science experiment. Perfect.

SMOOTHIE 4: Swamp Thing
1 cup carrot juice
2 cups spinach
1 cup parsley
1 banana
1 cup strawberries

This looks terrible but tastes awesome. Your body will love you.

SMOOTHIE 5: Orange Alert
1 cup carrot juice
2 tangelos
1 banana
1/2 cup mango
1 cup cantaloupe
1/2 cup pineapple

SMOOTHIE 6: Summer Loving
1 cup watermelon
1 cup pineapple
1 tangelo
1 banana
1 cup strawberries
T lemon juice

Day 23: Wasabi Vinaigrette!

almost forgot to put the recipe for this bad boy down before I forget.

2+ T apple cider vinegar
1T lemon juice
1tsp Braggs
1+ tsp wasabi paste
pinch minced ginger
salt and pepper to taste.

combine the liquids, add the wasabi and whip with a fork until *thoroughly* mixed. Getting little wasabi chunks is kinda fun and exciting, but maybe only for those who are expecting them. Give your guests a break! add the spices and adjust to taste.

You will also note that there is NO OIL in this recipe. Yep, that's on purpose. I don't see the point in making myself an amazing salad and smothering it with oil, even healthy oil. I get my healthy fats aplenty from nuts and raw cocoa, thanks!

-giant smoothie. I didn't eat right away when I woke up as I wasn't hungry, but I went from not hungry to ravenous like a switch flipped after I'd been up for a couple of hours.

overall my mood today has been great, nice and calm and productive all day. Clear headed and in a getting-things-done frame of mind. Not bad for someone who is so chronically uncaffeinated! 

I can eat salad for ever. I'm loving the oil-free dressings I'm making, too. So delish. 

I was going to make some kale (I just typed cake, thanks brain.) chips this evening but I'll have to start them tomorrow instead, alas. Kale chips for the weekend, woot woot!
